Cheddar Broccoli Soup

Ingredients

  • 2 Tbsp butter
  • 1/4 cup chopped onion
  • 8 oz frozen or fresh broccoli
  • 3 cups chicken stock
  • 1/2 lb cheddar cheese, cubed
  • 1/2 cup milk
  • 3/4 tsp garlic powder
  • 2 Tbsp arrowroot powder
  • sea salt to taste

Directions

  1. Melt the butter in a stockpot over medium heat. Add the onion to the butter and cook until it begins to brown and caramelize, 5-10 minutes.
  2. Stir in the broccoli and add the chicken stock. Simmer everything until the broccoli is tender, 10-15 minutes.
  3. Reduce the heat to low and stir in the cheese, milk, and garlic powder.
  4. Add the arrowroot powder and sea salt, then stir well to incorporate.
  5. If you want to puree the soup you can do so now by using an immersion blender in the pot or transferring batches of the soup to a blender. Blend to desired consistency.
  6. Serve and enjoy.
