Cheddar Broccoli Soup

Ingredients
- 2 Tbsp butter
- 1/4 cup chopped onion
- 8 oz frozen or fresh broccoli
- 3 cups chicken stock
- 1/2 lb cheddar cheese, cubed
- 1/2 cup milk
- 3/4 tsp garlic powder
- 2 Tbsp arrowroot powder
- sea salt to taste
Directions
- Melt the butter in a stockpot over medium heat. Add the onion to the butter and cook until it begins to brown and caramelize, 5-10 minutes.
- Stir in the broccoli and add the chicken stock. Simmer everything until the broccoli is tender, 10-15 minutes.
- Reduce the heat to low and stir in the cheese, milk, and garlic powder.
- Add the arrowroot powder and sea salt, then stir well to incorporate.
- If you want to puree the soup you can do so now by using an immersion blender in the pot or transferring batches of the soup to a blender. Blend to desired consistency.
- Serve and enjoy.
